This simple loaf was a favourite of my late father, and it brings back fond memories of Christmas pasts.
Not one for traditional Christmas cake – too rich and heavy – Dad much preferred this simple loaf.
This is one of the recipes that came with me when I moved to Canada 23 years ago with my husband, Calvin, and our three young sons.
It still takes me back to my parents’ kitchen, and makes me reminisce about my childhood.
My father passed away almost 14 years ago, and I miss him every day.
It was hard to move to a new country, but knowing I had my dad’s love and support in doing so helped tremendously.
When I moved here with my family, my dad placed a clock – showing B.C. time – beside the existing wall clock. With just a glance, he knew what we were up to.

Dad’s Christmas loaf
• 1 cup All Bran
• 1 cup soft brown sugar
• 1 cup mixed fruit
• 1 cup milk
• 1 cup SR flour (cake & pastry flour)
• Preheat oven to 325 F or 170 C degrees.
• Line a 2lb loaf tin.
• Mix All Bran, sugar and fruit in a bowl, pour on the milk and let stand for about an hour.
• Add the sifted flour and mix well.
• Put the mixture in the loaf tin, and bake for about one hour, until the skewer comes out clean.
