Love: Preparing for the party on Christmas Eve

Love: Start your own family traditions - a special series of recipes have been running in the Langley Advance since Dec. 8, here’s another.

With my family and friends, Christmas is definitely a time for indulgence and Christmas Eve (most often spent with our best friends) is one big feast of various delicious dishes.

I have a tiny crock pot that is perfect for cheese fondue and I found this recipe (and modified it) a number of years ago.

It’s still a favourite when we show up on Christmas Eve with a bottle of wine (or two) and all the makings.

Even when it’s just us and our friends we can finish the pot off.

If we’ve added others to the Christmas Eve mix, it’s best to get your bread chunk ready or you might miss out!

Cheese Fondue

Ingredients:

• 2 tsp cornstarch

• 1 tbsp cold water

• 1 garlic clove

• 1 ¾ cups dry white wine

• 1 pound grated cheese – Look to Emmenthal, gruyere or a white cheddar of excellent quality

• ¼ tsp white pepper

• Dash of salt

• 3 tbsp Kirsch

Directions:

Stir cornstarch and water until smooth.

Rub inside of fondue put vigorously with garlic clove (you should be squishing it as you rub).

Add wine and bring to a boil. Reduce heat, add grated cheese, stir constantly until cheese melts completely.

Add cornstarch mix, season with salt, pepper and kirsch. Stir and serve.
